06 - Gently pour the agar agar mixture over the arranged fruits, ensuring all pieces are covered. Cool to room temperature, then refrigerate for at least 45 minutes until fully set.
07 - Unmold from silicone mold or cut into squares if using a glass dish. Serve chilled.

# Expert Tips:

01 -
  • Its the perfect make ahead dessert that lets you enjoy your party instead of being stuck in the kitchen
  • The jewel tones of suspended fruit look like something from a fancy patisserie but come together in minutes
02 -
  • Fresh pineapple and kiwi contain enzymes that prevent setting, blanch them for 30 seconds first
  • Let the liquid cool slightly before pouring or your fruit will float to the top unevenly
03 -
  • Spray your mold lightly with oil before adding fruit for effortless unmolding
  • Let the jelly sit at room temperature for 5 minutes before serving for the best texture
