02 - Add the peanut butter, honey or maple syrup, and vanilla extract. Mix thoroughly with a spatula or your hands until a sticky dough forms.
03 - Fold in the mini chocolate chips until evenly distributed throughout the dough.
04 - Using your hands or a small cookie scoop, form the mixture into 1-inch balls, rolling firmly to hold shape.
05 - Place the balls on a parchment-lined tray or plate. Refrigerate for at least 30 minutes to firm up.
