# What You'll Need:

01 - 3 medium beets, trimmed and scrubbed

# How To Make It:

01 - Preheat oven to 400°F. Wrap each beet individually in foil with a drizzle of olive oil and a pinch of salt. Place on a baking sheet and roast for 40–50 minutes, or until fork-tender. Allow to cool, then peel and cut into wedges or slices.
02 - In a small bowl, whisk together olive oil, lemon juice, orange juice, honey, Dijon mustard, salt, and pepper until emulsified.
03 - Arrange arugula on a serving platter. Top with roasted beet slices, citrus rounds, and red onion.
