01 - Heat a splash of oil in a large Dutch oven or heavy-bottomed pot over medium heat. Add diced onion, jalapeño, and red bell pepper. Sauté for 5 minutes until softened.
02 - Stir in minced garlic and cook for 1 minute until fragrant.
03 - Add cumin, oregano, chili powder, smoked paprika, coriander, salt, and black pepper. Cook for 1 minute to toast spices and release their flavors.
04 - Add chicken breasts or thighs and pour in chicken broth. Bring to a boil, then reduce heat and simmer uncovered for 20 minutes until chicken is cooked through.
05 - Remove cooked chicken from pot and shred using two forks. Return shredded chicken to the pot.
06 - Stir in black beans, cannellini beans, great northern beans, and frozen corn. Simmer for 10 minutes to combine flavors.
07 - Pour in heavy cream and simmer gently for 5 minutes, stirring occasionally until chili is thick and creamy.
08 - Taste and adjust seasoning as needed. Serve hot with optional garnishes including cilantro, green onions, cheese, lime wedges, and sour cream.

# Expert Tips:

01 -
  • Its the kind of meal that makes people linger at the table longer than they planned
  • The three different beans create this incredible creamy texture without needing any flour or thickeners
  • Leftovers somehow taste even better the next day if they last that long
02 -
  • Mashing about a cup of beans against the side of the pot before adding the cream makes the chili incredibly thick and creamy
  • The cream can separate if you boil it too hard so keep it at a gentle simmer after pouring it in
  • Rotisserie chicken works perfectly if you want to save about 25 minutes of cooking time
03 -
  • Chop all your vegetables before you start cooking because this recipe moves quickly once you hit the stove
  • Let people garnish their own bowls so everyone can customize their perfect bowl
