01 - Preheat oven to 425°F and line a baking sheet with parchment paper.
02 - Combine ground turkey, onion, garlic, egg, parsley, Dijon mustard, smoked paprika, salt, and black pepper in a large bowl. Mix until just combined, then form into 4 equal patties.
03 - Toss sweet potato fries with olive oil, smoked paprika, garlic powder, salt, and black pepper on the prepared baking sheet. Spread in a single layer.
04 - Bake sweet potato fries for 25-30 minutes, flipping halfway through, until crispy and golden.
05 - Heat olive oil in a large skillet over medium heat. Cook turkey patties for 6-7 minutes per side until golden and cooked through to internal temperature of 165°F.
06 - Add cheese slice to each patty in the last minute of cooking, cover skillet to melt.
07 - Toast burger buns if desired. Assemble with bottom bun, lettuce, turkey patty with cheese, tomato, red onion, sauces, and top bun.
08 - Serve immediately alongside hot sweet potato fries.
