01 - 14 oz Italian sausage (mild or spicy), casings removed

06 - 1 large carrot, diced
07 - 14 oz canned cannellini beans, drained and rinsed

→ Basil Pesto

11 - 1 cup fresh basil leaves
12 - 1/4 cup grated Parmesan cheese

15 - 1/4 cup extra virgin olive oil
16 - Salt and black pepper, to taste

# How To Make It:

01 - In a food processor, blend basil, Parmesan, pine nuts, garlic, and olive oil until smooth. Season with salt and pepper. Set aside.
02 - Heat 2 tbsp olive oil in a large soup pot over medium heat. Add sausage, breaking it up with a spoon, and cook until browned. Remove excess fat if necessary.
03 - Add onion and carrot. Sauté until softened, about 5 minutes. Stir in garlic, cook for 1 minute until fragrant.
04 - Add diced potatoes and cook for 2 minutes.
05 - Pour in broth, bring to a boil, then reduce to a simmer. Cook for 15 minutes, or until potatoes are tender.
06 - Add kale, cannellini beans, lemon zest, and lemon juice. Simmer for 5 minutes until kale is wilted and tender.
